Instant Pot/Air Fryer Combo Chicken & Rice
Serves 4
I know, it doesn’t really look that special, but it’s really, really good.
Ingredients
- 2 frozen chicken thighs
- Salt
- Pepper
- Seasoning salt (johnnys or other)
- 2 cups of chicken stock
- Garlic
- 2 cups White Rice
Steps
- Season thighs with salt, pepper and seasoning salt.
- Pressure cook frozen thighs on a rack on high for 15 min (10 min if thawed). Add 2-ish cups of chicken stock and a few cloves of garlic to the pot. Add onions if you wish.
- Allow the pressure to naturally release.
- Take out the rack with the thighs and put on a plate. Save the broth mix.
- Add rice to the rice cooker pot and rinse.
- Use the broth mix in place of water for the rice.
- While the rice cooks, place the thighs back in the air fryer and air-fry skin up for 10 min at 390°F.
- Take the thighs out and use two forks to shred the meat. Add the meat back into the pot with cooked rice and air fry at 390°F for 5 min. Rice should be just turning golden brown in spots on top.
