Ingredients
The Crust
- 17 graham crackers sheets
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 1 stick (1/2 cup) melted butter
Cinnamon Apples
- 2.5 apples; small dice (1cm)
- 1/4 cup (4 tbsp) butter
- 1/3 cup brown sugar
- 1 ¼ tsp apple pie spice (cinnamon, nutmeg, allspice, ginger, cardamom)
- 1 ¼ tsp ground cinnamon
- Large pinch salt
- 1 tsp lime juice
Crisp Topping
- 1 cup All-Purpose Flour
- 1 ½ cups apples & cinnamon instant oats
- 4 tbsp brown sugar
- Large pinch salt
- 1 stick (1/2 cup) melted butter
Cheesecake
- 24 oz cream cheese at room temp
- 2/3 cup sugar
- 3 tbsp sour cream
- 2 ½ tsp vanilla extract
- 3 eggs
- Large pinch salt
Steps
- Preheat the oven to 350F. Blend the ingredients for the crust except the butter. Pour the blended ingredients in a 9x12 pan lined with parchment paper and mix with melted butter. Spread evenly and flatten with the bottom of a flat object, like a shot glass. Bake for 10 minutes then set aside.
- While the crust bakes, peel and dice the apples. Then, melt the butter in a pan, add the apples, sugar, apple pie spice, cinnamon, salt and lime juice. Cook for 5-10 minutes then set aside.
- Mix the ingredients for the crisp topping in a small bowl and set aside.
- In another bowl, use a hand mixer to mix the ingredients for the cheesecake. First mix the cream cheese and sugar. Then add the eggs, sour cream, vanilla extract, and salt. Mix until smooth and creamy.
- Pour the cheesecake mixture on top of the crust. Add half of the crisp topping, then the apples, then the other half of the crisp topping. Bake for 45-50 minutes. Cool in the fridge for at least 6 hours.
